Crème Brûlée
Evenly sprinkle with granulated sugar and pour off the excess
Light your torch carefully, as per its instructions, and adjust the length of the flame to medium
Slowly move the torch closer and keep it moving constantly to keep it from burning one area
The sugar will begin to turn caramel-colored and you'll also smell the delicious aroma of cooked sugar, similar to cotton candy
Chef's note - pull the torch away if the sugar smokes excessively
When you're finished you'll have a hard, glass-like glaze of caramelised sugar on top
